ELLIOTT

Elliott has over 14 years experience bartending across the world, from his home in Scotland to Ireland, Africa, Mexico and Dubai. 

While working in Ireland he worked in cork, bar cask for a Panda & Sons takeover with Jono McDowell.

He includes top 50 best bars in the world like Pandas and Sons, Cause & Effect Cape Town and Bar du port Dubai working with in his resume, he has worked alongside leading bartenders such as #1 bar world, Iain McPherson, Kurt Schlechter and Sebouh Tato.

 

Elliott also managed The Mulberry Project in Tulum and Nairobi, a travelling cocktail bar originally from New York, while managing the bar they where nominated for best international bar team in 2022 in Tales Sprites Awards before Andrea and Elliott opened Quetzal.

ANDREA

Originally from Mexico City, Andrea has been cooking and learning her whole life from her mother and grandmother for as long as she can remember cooking classic, genuine and delicious Mexican comfort food using only the finest ingredients, showcasing the vibrant flavors of the region.

Andrea has 15 years of hospitality experience, with 10 years working in Hartwood soaking up front of house, bartending and kitchen skills. Her culinary techniques include time-honored methods such as pickling and fermentation, which add delightful twists and layers to her dishes.
